Did Somebody Say Cup Cake?

Cup Cakes!!! Easy to make, eat it anytime of day.
I personally love it with a cup of coffee, it test like haven. But, what I love the most is when my little one gives me complement on how good the cake taste; it melts my heart.
When making cupcakes the first problem I found was quantity of ingredients; this is the most important even a little change makes a lot of difference. I would suggest to use measuring cups & weight scale to get the exact quantity.
Lets us make some cup cakes now.
1½ Cup of all purpose or cake flour
3 Medium eggs
1½ tsp of vanilla extract
1½ tsp baking powder
½ cup butter (around 100gm), you can use salted butter also
⅔ cup sugar
⅔ cup sugar
¼ cup milk
One lemon zest
Optional- orange zest and 1 tbsp. fresh juice
With these ingredients you should be able to make two batches, total of 12 cupcakes
Prepare Cake Mix:
Butter should be at room temperature; this makes it easy to mix, and you get a very good texture. To mix you can use a electric stand or hand mixture. Start with low speed and gradually move to medium speed. And remember to scrap it from side of your bowl using spatula. Once you butter is soft and fluffy keep is aside.
Pre heat your oven to 180 C or 350 F. Set your muffin paper cups on cupcake tin/mold. Pour batter using spoon, fill it little more than half of the cup.
Pour Granulated sugar over your butter mixture; if you are not having this handy you can use Mixer Grinder to make granulated sugar from normal sugar. Once done first use spatula to mix it a little the use electric mixture, else you might get a little sugar cloud over your mixing bowl. mix it well for 7-8 minutes.
Now pour the eggs one by one and mix. Mix it some 5 minutes or so to get a smooth mixture.
Add zest, juice and vanilla extract and mix again for 2 minutes
Now we are going to pour dry ingredients in. First pour flower using a sieve, add baking powder in it and again mix for 1 – 2 minutes.
We are done with our cake mix, lets bake it now
Preheat your oven to 180 C or 350 F. Set your muffin paper cups on you cupcake tin/mold. Pour batter using spoon, fill it little more than half of the cup.
Put it in the oven for 14/15 minutes for soft and 17/18 minutes for hard cupcake.
